Quick prehistoric lesson, kiddos!
Rosamygale grauvogeli (literally "Grauvogel’s Rose bird-eating spider") is an extinct genus of Anisian age spiders found in the Vosges of France, making it the oldest mygalomorph to be discovered. They were tiny, possibly having grown no bigger than a centimeter. Fossils were found by the shoreline of what would've been a swamp or the Zechstein Sea in prehistoric times, suggesting it may have eaten larval crustaceans alongside tiny scorpions and insects that wandered by its burrow (so despite its name, it totally didn't eat birds because of how small it is).
Ace survived his encounter with Kaido, holy shit.

I have a lot to say. I've started watching One Piece and just anime in general this year and have fallen in love with it, currently on the beginning of the Alabasta Saga. I have plenty of other anime I'm going to watch after I finish One Piece in about 5 years. Berserk, Soul Eater, Cowboy Bebop just to name a few. BTW, is there anywhere I can watch the English dub without having to buy a subscription?

Dubs, not that I know of.
One bit of advice, early one piece anime sort of leading up to the timeskip is great (don't worry, you have a long way to go until there), but unfortunately it catches up to the manga and slows to a crawl. Ridiculous amount of padding to fit something like a chapter an episode, if that. Honestly once you hit a certain point (you will know when you start to feel it) I would recommend just switching to the manga.
Some parts are definitely hype in the anime, but getting to those moments can be a pain post time skip.

He's basically a Gyarados. Comes from the Japanese story of carp that turned into a dragon by climbing a waterfall. Wano is one big Japan reference, so that makes some sense.

Finally got around to reading through One Piece after COVID-19 gave me a lot of free time to catch up on it; overall one of the most enjoyable experiences I've had reading something in a long, long time and has absolutely become one of my favorite series to date. And I finished just in time for Chapter 1000! Bonus!
Maybe she's there to be Big Mom's personal caterer for the festivities on Onigashima after what happened at Whole Cake? That's the only reason I can think for possibly bringing her to Wano, other than the obvious fanservice with Sanji.
My big question is how did he even obtain a fruit that powerful in the first place? People are speculating that it was the treasure Rocks and his crew took from God Valley and that was given to Kaido afterwards, which could be interesting. Personal theory of mine: maybe the reason the island vanished was that Kaido couldn't control his Devil Fruit powers yet and in his warpath just completely decimated the island?

Alright, time to re-read Wano to prepare for chapter 1000. Which, to my knowledge, makes it the second Jump series to reach 4 digits after Kochikame.
