I’ve noticed the same thing. It seems the mormons that get the most attention from journalists are generally the ones that are Democrats or anti-Trump Republicans, so it kinda skews the image of how they vote. Most mormons I met though are avid Trump supporters. I suspect that some Democrats would like to flip their votes since it would give them more reliable votes and would give them a hypothetical edge in Nevada and Arizona. I highly doubt that they would succeed in doing so though.
Forget the polls, have they even released the official Iowa reults? If they can't even run their caucus, where everyone is on-site, how could you trust any polling numbers, where you have to work remotely and rely on statistical interpretations?
I've noticed CNN is starting to push back against the Democrats a little bit more. Is it frustration with their incompetence, a pivot to the middle to appear neutral, or something else?

The early voting modeling out of the Minneapolis metro area is interesting and I think it is positive for Trump. I grabbed each county’s model from TargetSmart and compared to voter registration numbers from the Secretary of State to get the percentage of voters who have cast early ballots thus far in each county. Assuming a voter turnout of 70%, which is typical for the state, and knowing that Republicans are more likely to vote in person on Election Day, this looks like every metro county other than Hennepin, Ramsey, and maybe Dakota will be red. Washington County alone accounted for 10,000 of the 40,000 votes for Hillary in 2016 and so far is modeling towards Trump.
Percentages of eligible voters who have cast early ballots:
Anoka: 18%
Carver: 15%
Dakota: 21%
Hennepin: 25%
Ramsey: 24%
Scott: 15%
Washington: 20.5%

Honestly I haven’t seen CNN this harsh on the Democrats even back in 2016 and it’s amazing how much both Biden and Pelosi have pissed them off this election.
Trump is part-rubber, or Teflon if you're based. Biden hasn't survived any of his past campaign scandals. And the only reason he's survived thus far is because media coddling. Biden is in no position for an OS.
