That was my first thought upon seeing a picture of her. She's quite skinny in most of the pics/videos so she might just have that androgynous look some skinny people have

I can read the characters (Arabic and Farsi character sets intersect), and It's entirely possible that جنسيت refers to Nationality, and not gender. The Arabic equivalent of that word would be جنسية, which also can be used to refer to either nationality or gender, depending on context.

Also, if you look at the picture on the left, it really reminds me of old middle-eastern fashion photos, circa the 90's.

I’ll be honest, I don’t speak any Persian at all but I do know they borrow a lot of words from us as well as some of the same letters.
As @neural said, جنسية means “nationality” but it can also mean “sexual” as the word جنس means “sex” in traditional Arabic (and “gay” in Kuwaiti dialect).

So judging from that, the picture is basically describing her before and after her sex change.
