Paranoia about AI model nonsense in conjunction with an insane fanbase would be my bet. It'd explain the text-to-speech if nothing else, TTS cloners can run well off 30 seconds of audio. Does he have a distinctive voice? I don't think I've heard it although I've seen the pictures of him from the Homestuck era.
I think its simpler than that, he want to build up a unique image and identity and the stupid dog is more iconic than a random autistic twink.
He looks at his idol, ZUN, who simply needs to wear a green hat and holding a beer/trumpet and then looks at the mirror and realizes that he has nothing that makes him immediately recognizabke and feel insecure about himself. That's what the purpose of the dog is.

he's getting pretty old
Yup, "I'm old" and "You're taking too long" are actually Freudian projections from his subconscious, possibly in his nightmares when his subconscious screams at him to finish the fucking game and get married instead of gooning to yuri into his 40s

1 nightmare = 1 chapter. Simple as

There’s no logical reason for Toby to hide his face, so I’m assuming it’s a self-esteem/image issue.

And tbf he looks like a massive twink faggot one bad day away from troonism. I have seen the cross dressing pics. He’s extremely easy to make fun of by appearance, despite the game’s making him
famous and well-received.

It’s pointless though cause uncensored pics are everywhere, so who knows why he does it.

Maybe he doesn’t want his tranny mob fans tracking his every move?? idk seems pointless now too

I've seen the picture of Toby with Sakurai and all the other famous Japanese game devs - I feel like what really makes Toby stand out from a lot of the other indie game devs is that, for the most part, he's much more professional. This is why I tend to respect him more despite him being kind of woke.

Given how I've seen a lot of people here suggest that Toby is very experienced when dealing with fandoms, he probably has to walk on eggshells. If more indie devs acted professionally like Toby less people would have problems with them.

Toby had a lot of professionalism training from seeing firsthand the dumpsterfire that was the Homestuck fandom, and his mentor in how not to act was Hussie. A lot of people don't have that kind of experience starting out which is how you get the YIIK guy friiking out on the Dick Masterson show or the LISA guy melting down after his dad died. Regardless of the arguments you could make for or against those two, no one is a rock, and if shit gets rough and you can't handle it you should really just GTFO off the internet for the time being. Nobody will ever let that stuff go, and I think that's the main lesson Toby took away from being an internet poisoned youth.

I admit, it's one of the most respectable qualities about Toby he does something so many devs these days have forgotten how to do. Shutting the fuck up and not spewing unnecessary bullshit on main. If it's not relevant to your position? Then say nothing.
It's such a simple fucking thing to understand yet so many fail to. They have too much of an ego and feel like everyone is entitled to their retarded opinions that nobody asked for.

Twitter shares a large part of the blame because they tricked everyone into adopting that mindset. You ARE a soldier for the cause and you WILL fight on our battlefield and we WILL reap the benefits of the engagement it brings

So I just remembered today and it's probably already been said in the thread beforehand but I think it really speaks to how absolutely dogshit the fanbase is when there's multiple big youtubers and streamers that refuse to play Undertale and or Deltarune on their channel out of principle.

It kinda sucks too since these sorts of games are best played blind and replayed multiple times to find the secrets, but then you've got the entirety of chat in your ear telling you exactly how to play between "DUDE YOU'RE PLAYING IT WRONG YOU'RE NOT SUPPOSED TO KILL THE MONSTERS FUCKING IDIOT" when it's their first ever blind run to calling Kris a dude and having Twatterites going for your throat, and that's just the tip of the iceberg.
Joel's streams for these are like ground zero and I'm glad he's got a more positive outlook on it of "these fans are just passionate" and actually not being afraid to bite back at them.

Joel actually does like UT/DR and didn't just play it to tick it off the list and get new kahntent
Honestly if I went into streaming I'd make sure to always do the following:
1. Mention UT/DR but never play them, so the comments keep asking for it and farm engagement.
2. Make silly mistakes in statements I make, so the comments correct me boosting engagement.
3. Pronounce certain words wrong, so the comments correct me boosting engagement.
