Simple. Aaron is the only person that ever managed to break out from Nick's control. Everyone else in Nick's life has been under his narcissistic control. His wife, his parents, everyone. Aaron was in the polycule, and was under Nick's influence, but ultimately managed to leave the situation because he realized how fucked up it all was. In a way, Aaron existing separate from Nick is a living testament to Nick's lack of control over the situation, so the greatest blow to Nick's ego and narcissism is Aaron. That is why Nick is so obsessed with Aaron. He believes that if he somehow 'destroys' Aaron, then he can retake control of their 'relationship'.
