Because an egg plus an egg is just two eggs. But part of your equation forgot to factor in the addition of the chemical changes employed on the eggs by heat. That's different. Now if I take two vanillas, 3 sugars, and 6 creams, that's also different from 1 vanilla, eight sugars, and two creams. Ice cream on the other hand is just frozen milk blended up with cold milk. It's not different. That's the same as pouring two glasses of water together and saying it's different from a regular glass of water. What you're not understanding is milkshakes and slushies are an emulsion that is held by cold temperature. Something like mayonnaise for example is also and emulsion of eggs fat and acid that can be held at room temperature. You can take the same base ingredients that are in a milkshake (cream, sugar, aromatics i.e. vanilla) and depending on how you prepare them you can make a few different things like custard, ice cream, pudding etc. It's just a frozen dessert, I don't get why you're missing the point.
