In one of those "fancy smashburger" videos, J. Kenji Lopez-alt made a "beef cheese" with american cheese, sodium citrate, and beef fat.
It's an honestly gross looking mix that he said was delicious, but I've made a similar mix in past by refrigerating cheeseburgers after a bbq.
It's nasty. It's as if you mixed all the worst traits of american cheese and straight up grease.
So, I am looking forward to the beef flour, because I KNOW it will be unpleasant. It will be a nasty slurry, and Jack's bitch face will be legendary.
