Death: Correct me if I'm wrong (I'm just some persona fag), but isn't death supposed to be transformation rather than just death? I think that for if you want to use Sargon, the tower might be a better choice as the tower represents destruction/crisis.
You're not wrong. Death is supposed to represent change for the better. After all, the tarot's are supposed to show us the "Fools Journey". Only edgemasters and David Cage think Death means actual death. That's reserved for the Tower, but it's not as cool to the eyes of a normie.

Sargon with a broken milkshake would be perfect for Tower. As for Death, i honestly think Wings would be a good fit. He's mostly turned things around for himself, right?

You are correct about this. Death is about a transformation, typically perceived to be good but can be meant for just about anything. The most prevalent theme through all decks is that death is about leaving a "bad" situation behind (the death) and looking to the perceived good in the future. When Death is pulled it may be unexpected, so this could apply to anyone who doesn't know that they're going to have to face a transformation soon as well.

Also, different styles of decks can have different, more nuanced meanings for cards. I think it's good that we stuck with the idea of Rider-Waite because it's one of the most prevalent and generalized decks and works for most situations. I'm kind of a tarot f.ag so if you or anyone else has questions about the meaning of cards I can try to help. I own a couple of decks for fun and like to pull them out for readings at parties lol.

Edit: Just wanna add I think a good contender for Death could be Sammie Bushart. She's always leaving her old niggos behind and her 2 week old pregnancies too.

Johnathan Yaniv seems like a natural fit for Justice or Judgement given how much time that fucker spends in various types of courts.

6 (the lovers): the Love Quest
7 (the chariot): the Sonic Watch and Win Sweepstakes
8 (justice): Judge Slack Lewis or Chris's attorney during his case against Schneider
11 (strength): Kacy's Dad
15 (the devil): the idea guy
16 (the tower): 14 Branchland Ct in flames or SheCameForCWC
20 (judgement): the dimensional merge
