What people like that don't realise is that there was no one unified ”canon” of Greek or Roman polytheism in the same way that there's a canon of Scripture, for instance. If you were an ethnic Greek living in Upper Egypt, for instance, you'd have worshipped a different set of gods from a fellow Greek who lived in the Bosporan Kingdom, Greece proper, or maybe even Alexandria.
The closest comparison I can think of is how West African polytheism varied from place to place within West Africa despite being, broadly speaking, based around the same faith, and how it could adapt to Christian or Islamic rule by incorporating bits of Catholicism or Islam into its rituals, in the same way that Greek or Roman pagans would worship the local gods in addition to the twelve Olympians.

That could actually be a compelling basis for an Elseworlds (granted one would have to create a Greek goddess of fishnet stockings to accomodate Black Canary). It's not to say that capeshit has never been able to deliver anything meaningful. You could make arguments for it as a continuation of older mythological traditions, at least when it's at its best. But Blob wants capeshit to replace the past rather than reframe and reflect it, so he'll use comics as a cultural kiddiepool rather than let it point him towards the really worthwhile stuff.
