Oh yeah, it's all about flavor profile matching. Cheddar needs stronger flavors or it'll overpower everything where American is milder. Also, mayo and ketchup as a default, I know not everyone is big on mayo, but it's worth it if you get a good mayo, something with coconut or avocado oil. I wouldn't go with it on it's own, but it's a great base to pair with other sauces. Mustard is for hot dogs and proper sandwiches.
