I make a roast chicken, which by itself is plenty for two servings. I then use the leftover carcass (plus any leftover bones, giblets, and neck) to make a couple of quarts of chicken broth. After the broth is strained/done I harvest any leftover chicken meat; there's usually about 2 cups in there. While the meat doesn't have much taste, it still makes a good pizza topping, or in enchiladas or curry. I've been cooking for a long time and am convinced this sequence has the best food quality/cost per serving ratio possible.
I will compromise and bring up the only worthwhile things the descendants of the French have done: poutine and gumbo.
