Why did it have to be boxing? Given that these people are content creators and (in theory) comedians why not do a WWF style event? Your own little Tubermania. Have them cut promos and play as their personas, create fake beef and then settle it in the ring. Ian and Anus are the best ever heel promoters in the industry just by virtue of who they are as people and if the fights look kind of dodgy who cares? The wrestling industry has been exposed for so long at this point that people will expect the fights to look kinda hokey, and it's not like it's any more or less dangerous than actual boxing given the Tuber's lack of physical fitness and discipline so you'd get the added benefit of they might actually get hurt.

It just seems like such a common sense thing to do; you are entertainers, put on a show!
