Maybe not the best idea or quite what you're looking for, but a tattooed-on wedding ring will never fall off and lasts til death does you part.
 
Ask her what gemstones she thinks are the prettiest. Or go with her birthstone, as long as she isn't April. Hopefully, she isn't one of those "only a diamond" girls. You can find some synthetic gemstone rings at mall jewelry stores for cheaper than what a conventional engagement ring would be.
 
You can just go with glass.. you can get a ton of nice looking rings just depends if shes the type to check or not.
 
Lab created white sapphire if she wants a diamond, they’re much cheaper and have a higher refraction index (sparklier)
Hit up some pawn shops or check Craigslist the day after Christmas for scored women selling rings they don’t want
 
It's actually pretty easy to keep a ring under a grand if you're not doing diamonds. If she won't accept anything but a genuine diamond, you should probably ditch her because if she's that much of a status bitch that she doesn't care that the diamond was likely mined at gunpoint off the back of a slave child, she's gonna be way more expensive later in marriage.

I like the birth stone idea however modern Western Astrology is inaccurate and shouldn't be trusted, the sun could also be a malefic for her. I would recommend you find out her mayan sign and it's assigned stone.

Also pay attention to whether she likes to wear silver or gold.

I meant to say that simulated diamonds are 90% *cheaper than lab created diamonds. Moissanite is more hard wearing than cubic zirconia and less likely to chip/crack.
