By the time of the eruption of Vesuvius, Pompeii had been majority Latin for a few generations, but there were a large number of Greek slaves resident there. It was also the mark of an educated Roman to be able to speak, read, and write Greek. I haven't studied Pompeian graffiti, but it would be very surprising if there wasn't Greek graffiti to be found.
