Funny enough, male birds are often de balled so they are more tender.

If you want to read about it it's called a Capon. But yes, when you eat chicken it's a female unless otherwise noted. That being said, a friend who had a rooster that was how do we say, causing problems was dealt with but because he was an intact male, we stewed it to soften the meat better.
