While true, I think it will hurt these streamers long term. Twitch is a well established platform with many users which are very loyal to it. Ninja and the mixer deal, or cinnamon toast streaming on Facebook comes to my mind, switching platforms hurt their viewership. For the big time streamers with huge audiences much of their influence is to send their viewers to others giving them power to create ball washing orbiters. Many streamers share their viewers, and if they take refuge in various other platforms, they'll loose some audience, as I guess most parasocial drones prefer to stick to just one streaming platform of choice.
Also, Twitch goes above and beyond to coddle these faggots, there is no guarantee that other platforms will deal with them in the same manner.
The other concern is that streaming platforms have yet to prove that they can be profitable. Twitch still struggles with profitability, and the biggest competitor- Kick- is AFAIK financed by the gamba money from the associated shady online casino. Streaming a low latency content to hundreds of thousands viewers virtually 24/7 around the world is expensive. You have to pay for the infrastructure, maintenance, etc.
I think dreary times are ahead of streamers when the Big Tech takes the plug out.
