unagi = broiled sea, so that's one example of cooked sushi. Another one that's less common is ankimo, which is monkfish liver steamed in sake. A fairly classic sushi uses eggs cooked in a manner similar to omelettes (I think it's tamago -- hope I got that right). Also cooked octopus (tako) -- in my book, good versions should be a pleasant compromise between tender and crunchy
