Yeah running pleroma is the best as it takes the least resources and there are some good ways to automate the set up if you guys aren't server savvy https://fediverse.express is the free tool made by Miss Pasture that allows you to quickly and easily stand up a fediverse instance in the cloud (AWS, Oracle, Digital Ocean, and Vultr) If you know your way around servers and linux the install isn't super difficult

Not too expensive for smaller instances, privacy/free speech respecting, and good support. Sleepy.cafe runs on DigitalOcean with minimal issues too and its pretty cheap for their ~30 users

You can always open/close registrations later with minimal effort Pleroma uses ~1 GB memory on its own so keep that in mind when buying a server since I've seen some people have issues with the lower end servers. CPU usage/load average scales pretty linearly with active users/posts on the instance/federated posts but FCE ran on one cpu for a while with no real issues
